With Memorial Day rapidly approaching, the first thing that comes to mind for many of us is: SUMMER IS HERE!  That means fun holidays, warm weather, swimming pools, lakes, baseball, vacation time. And, of course, grilling!

Here’s an easy one for the grill – and a favorite for many –   RIBS.

Take an extra-large large aluminum pan and create a “false bottom” with foil in the pan about an inch from the actual bottom of the pan. Fill the pan with water (3 cups) and liquid smoke (1 cup) to about the level of the false bottom. Take two or three racks of pork back ribs, score the bottom with a knife to cut the membrane and rub them generously with your favorite spice rub, place them on top of the foil.   Cover the pan first with a layer of plastic wrap, then foil on top of that.  The plastic wrap and the foil should then be sealed tightly around the edge of the pan.  Put the ribs in the oven.  Cook at low heat – around 220 degrees – for three hours.

To get the grill ready, put an aluminum pan full of water on the bottom rack of the grill.  Build up charcoal on either side.  Light. While it is heating up, soak some hickory chips in a large bowl of water.  When the coals are white, place the ribs in the center of the grill – between the charcoal on each side and above the pan of water.    Throw a few hickory chips on the charcoal, close the lid, sit back, and enjoy your day!  You may need to add a few more charcoal briquettes, and throw a few more hickory chips on as the ribs cook.  Turn the ribs occasionally.  When you think they are getting close to being ready (bones are popping out), slather on your favorite barbecue sauce.  Cook them for another 5-10 minutes.  Serve up some great ribs!
